This post is going to be long...I have so much to accomplish. There's the giveaway winner, an award speech, a handsome kitty, and food, of course! Not necessarily in that order. Hmmm... where to begin?
I'll start with awards. First up is the Kreative Blogger award that I received from all of these sweet foodie friends; Peachkins of The Peach Kitchen, Finsmom of Latest Addictions HannahBanana AKA Amanda of Nourish, Teresa of A Blog About Food, and the Heavenly Housewife of From Donuts to Delirium: My Life As A Housewife and Dara of the Cookin' Canuck.

Next, I received the Premio Meme award from Krista of Krista's Kitchen.

Judy of Judy's Kitchen gave me this friendship award.

Thank-you all for thinking of me! I apologize if I've left any out - I'm horrible about posting them. It's all I can do to get my posts up in a timely fashion. I'm not passing them on - and my reason being is that I follow so many blogs for me to just a pick a few of them to award is too hard - I would be here for hours trying to decide. The truth is I want to give them to all of you, especially the friendship award. Where would I and this blog be without you? Your comments and support are what inspire me and make this all worthwhile!

Now for food. Gluten-free food! Since I'm posting the winner of my Gluten-Free Dessert Package I thought I would include another gluten-free recipe. Chances are if your following a gluten-free/wheat-free diet you've tried the Chebe bread mixes. I tried this flatbread/focaccia mix and didn't like it made according to the package directions. It has a very chewy and tough consistency. I did a little experiment and came up with a skillet flatbread using the mix. This way has a tender, softer consistency, and the flavor is better. These are great to make taco-style sandwiches with, pizzas, and wraps.

Skillet Flatbreads
1 package Chebe Flatbread/Focaccia Mix
2 tablespoons Olive Oil
2 eggs
7 tablespoons Club Soda
Baking spray
Combine everything except the baking spray. Stir until you can't stir anymore. Spray a wooden board/counter/tabletop with olive oil baking spray. Remove the dough and knead until combined. The dough will be sticky. Heat a non-stick or iron skillet over medium-low heat. Divide the dough into six pieces. Spray the board and press out into a circle. Use a spatula to lift into the pan carefully. If dough breaks apart just press it back together after you get it in the pan. Cook about five minutes on each side or until golden brown. Cool and store in a plastic storage bag.

I'm in love with your kitchen cat! He looks a lot like my Ashy Poo. He's a flamepoint Siamese, but he was already blind in one eye when the pound picked him up on the street in Austin when he was about a year old. He only has one beautiful light blue eye, but he's a dear! He's been with me for almost 9 years now.
